There's no hard and fast rules, but stilton cheese, hot English mustard (but any will do), chutneys, pickled onions, relishes, cold cured meats, etc. They make the perfect snack, meal or buffet delicacy.

Our sausages make the wonderful candidate for a traditional Aussie barbecue, or can also be cooked inside on a grill, in the oven or in a pan. They are best served in good quality bread, as good old 'bangers and mash', toad-in-the-hole, or any other way you can think of.

Black pudding makes a good breakfast a great breakfast. Part of the world-famous English fried breakfast a slice of black pudding is a versatile British favourite that can also be used to add a splash of flair to any home-cooked meal.

Address to a Haggis

FAIR fa' your honest, sonsie face,
Great chieftain o' the pudding-race!
Aboon them a' ye tak your place,
Painch, tripe, or thairm:
Weel are ye wordy o'a grace
As lang's my arm.
The groaning trencher there ye fill,
Your hurdies like a distant hill,
Your pin was help to mend a mill
In time o'need,
While thro' your pores the dews distil
Like amber bead.
His knife see rustic Labour dight,
An' cut you up wi' ready sleight,
Trenching your gushing entrails bright,
Like ony ditch;
And then, O what a glorious sight,
Warm-reekin', rich!
Then, horn for horn, they stretch an' strive:
Deil tak the hindmost! on they drive,
Till a' their weel-swall'd kytes belyve
Are bent like drums;
Then auld Guidman, maist like to rive,
Bethankit! hums.
Is there that owre his French ragout
Or olio that wad staw a sow,
Or fricassee wad make her spew
Wi' perfect sconner,
Looks down wi' sneering, scornfu' view
On sic a dinner?
Poor devil! see him owre his trash,
As feckles as wither'd rash,
His spindle shank, a guid whip-lash;
His nieve a nit;
Thro' blody flood or field to dash,
O how unfit!
But mark the Rustic, haggis-fed,
The trembling earth resounds his tread.
Clap in his walie nieve a blade,
He'll mak it whissle;
An' legs an' arms, an' hands will sned,
Like taps o' trissle.
Ye Pow'rs, wha mak mankind your care,
And dish them out their bill o' fare,
Auld Scotland wants nae skinking ware
That jaups in luggies;
But, if ye wish her gratefu' prayer
Gie her a haggis!

Traditional English Pork Pies

Pork Pie - Original

Perfect with mustard and a cold beer, Pacdon's original pork pies are made using only the finest Australian pork. The pork is then ground, seasoned and then encased in a delicious rich pastry. Our pies are baked in the traditional manner, without using a supporting tin or hoop like most other pies. This gives the classic bow-sided shape of an authentic Melton Mowbary Pork Pie.
Price: $4.00 each (235g)

Gala Pie

A specialty pie, the Gala pie, whilst sharing most of its ingredients with the original pork pie, is baked in bread tins to give it a longer, loaf like appearance and contains a seam of hard boiled egg running through it from end to end. Traditionally made to serve large numbers of people, the Gala pie is perfect for any function.
Price: $52.50 each (1.5kg)

Gourmet English Pork Sausages

Our range of gourmet pork sausages are made to order using coarsely ground prime pork shoulder and a delicate blend of herbs and spices. A delicious sausage and an all time classic. Our sausages are packed by weight and sold in approximately 500g. packs; this normally yields 6 sausages, occasionally 5 larger ones. Because our sausages are hand made and use natural skins, they vary in size slightly, minimum pack size is 480 grams. If you have a special requirement, for instance you must have six sausages, please make a note during the check-out process and we can price accordingly.

Lancashire Sausage - Plain

This sausage is our classic variety and the source from which all our other flavours spring. It was the first recipe we developed and thus the one of which we are most proud. This is our take on the traditional English pork sausage, and we've followed the traditional recipes from England very carefully and now bring it to the Australian market, the land of 'barbies and snags'.
Price: $12.00 per kg

Lincolnshire Sausage - Sage

The Lincolnshire sausage is one of the most famous sausages in all England. We make ours in the same way that Lincolnshire people have traditionally done, lots of the best cuts of pork, traditional seasoning, not bulked out with too much breadcrumbs, and lots of love and care.
Price: $13.00 per kg

Somerset Sausage - Apple & Cider

Hailing from the land of apples and combine harvesters, our rustic Somerset sausages will instantly take you to a world of rolling green hills, endless orchards and a rural idyll.

Yorkshire Leek Sausage - Leek

Cumberland Sausage

A closely guarded secret recipe, our Cumberland sausage contains a mixture of herbs and spices, some say the best outside Blighty. The gentle heat in this sausage really brings out the best in Pacdon's pork shoulder. Available in traditional coils and/or regular sausages.

Wiltshire Cured Meats

Cured hindquarter meat (leg) that is either left on the bone or boned and rolled before curing. A longtime British staple, gammon is a treat for any dinner table.
